Milk & Zucchini Frittata
Step 1 :
Preheat the oven to 375 degree F.
Step 2 :
Opt for muffin moulds or small baking container. Grease them well.
Step 3 :
Take a medium pan, pour the oil and heat it on a medium flame.
Step 4 :
Toss in the zucchini and leeks. Sauté for a few minutes till they turn colour and become soft.
Step 5 :
Add the herbs and sprinkle salt and pepper. Mix well.
Step 6 :
Take a large bowl and whisk together eggs, milk, and cheese. Add a bit of salt for taste.
Step 7 :
Into the greased baking bowls, add the vegetable mix little by little, leaving space for the egg mixture.
Step 8 :
Top the cups with the egg mixture up to a little above 80% of the cup.
Step 9 :
Bake for about 20 minutes.
Step 10 :
The done sign is when you see the frittatas puff up and turn golden brown.
Step 11 :
Remove one after 20 minutes. Prick it with a knife or a toothpick to see if it comes out clean. If not, continue baking for 3-5 more minutes.
Step 12 :
Serve hot or warm.
