Shavige Uppittu with Ghee Roasted Croutons

This recipe combines the traditional spiced vermicelli with crisp, buttery croutons for a delicious fusion of Indian and Western flavours.

Method:

Step 1 :

In a pan, add ghee and jeera. When jeera splutters, add chopped onion. When the onions turn translucent, add bread cut into 1-inch cubes. Adding a little more ghee, fry for a few more minutes until the bread pieces are almost roasted. Remove from pan and keep aside.

Step 2 :

Now, add coconut oil to the pan. Add the ingredients mentioned for tadka and stir on low heat. When mustard seeds start to splutter, add the vermicelli and roast until it turns light brown.

Step 3 :

Now add 1 cup of water and mix well. Take care to see that no lumps are formed.

Step 4 :

Add salt, turmeric powder, green chilli, and ginger. Keep stirring.

Step 5 :

Add half a cup more water after checking if the vermicelli is cooked.

Step 7 :

When vermicelli is cooked to the right consistency, add finely chopped coriander leaves and the roasted bread and onions.

Step 8 :

Mix thoroughly. It should be non-sticky and non-lumpy.

Step 9 :

Garnish with coriander and grated coconut. Sheviyan uppittu is ready to be served.
